Chicken Parmesan Zucchini Boats

Instructions
Preheat Oven to 400 Degrees
Combine the chicken, Olive Oil, salt, pepper and garlic powder into a medium sized pan. Cook on medium heat until browned.
Then add in the marinara sauce and set on low heat. Cook for about 8 mins or until the sauce is soaked into the chicken.
Then add in the parmesan, half of the mozzarella and stir until fully incorporated. Turn off the heat and set aside.
Wash and slice the Zucchini in half length-wise, then using a spoon scoop out the seeds on the inside leaving a well.
Place zucchini into a greased 9x13in casserole dish.
With a spoon fill the zucchini wells with the chicken mixture.
Add the rest of the mozzarella to the top of the zucchini boats.
Bake for 25 mins.
Then change your oven to broil mode, and cook for another 2-3 mins or until cheese is browned a little.
