Bacon & Gruyere Quiche

Bacon, Cheese, Pie….. What could be better? This was my exactly thought as I finally stumbled upon the perfect recipe to use up the last of the eggs in the carton. In the past, I always found quiches to be too dry and had that bland healthy taste. And really what could be better than bacon and some fancy Gruyere to satisfy your tastebuds!

What I learned:

I learned that Quiche is basically an omelette in a pie crust. There, I said it.  I’m not going to pretend like it’s anything fancy. This is a super simple recipe. Just like omelettes, the meat and veggies have to be cooked separately beforehand. I choose to add bacon, onion and Gruyere as a salty smoky compliment. (Take a look at our previous post on techniques to make crispy bacon in “The Perfect Bacon“. ) But really any combination of veggies or meat or both will do. I opted to use pre-made pie crust, because really no one can tell and honestly I didn’t want to spend a lot of time making crust.

Ingredients

  • 4 large eggs
  • 1 premade frozen deep dish Pie crust
  • ½ package Bacon
  • 1 small Onion
  • 1 cup shredded Gruyere cheese
  • 1 ¼ cup Heavy cream
  • Salt
  • Pepper

Instructions

  • Preheat oven to 400. Remove Pie crust from freezer and let it thaw enough that you can easily prick it with a fork. Prick bottom and sides with a fork. Put a piece of parchment over the pie and put pie weights over the parchment. If you don’t have pie weights you can use dry beans. Bake until it turns a light golden brown ( about 10 mins). Set aside to cool. 
  • Cook Bacon until crispy. Pat bacon dry and chop into small pieces. Set aside. 
  • Dice Onions and cook in bacon grease until it is translucent or a little golden brown. Pat dry until all grease is absorbed. Set aside.
  • Shred Gruyere cheese. Set Aside
  • Combine Bacon pieces, cooked onions and Gruyere cheese, salt and pepper. Put mixture into the baked pie crust. 
  • In a separate bowl, whisk heavy cream and eggs together. Then pour mixture into pie crust over the other ingredients. Sprinkle some extra cheese on top.
  • Place pie on a baking sheet. Bake at 325 degrees for about 45-55 min or until filling is set and the top is a golden brown.
