Mix-in prep: Cook the bacon until crispy, set aside to cool. Once cooled cut into ¼ inch pieces. Set aside. Grind unsalted pretzels into a flour. Set aside. Chop Pretzels into Pretzel Chunks
Dough Prep: Combine the butter and sugar in the bowl of a stand mixer with the paddle attachment. Cream together on medium-high for 2-3 minutes. Scrape down the sides of the bowl with the spatula, add the egg, and beat for 7-8 minutes until very light and fluffy.
Reduce the mixer speed to low and add the flour, pretzel flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than 1 minute. Scrape down the sides of the bowl.
Add in the mix ins, Bacon, Almonds, Mini Chocolate Chips and Pretzel Chunks.
Using a 1 inch scooper scoop dough into balls, place onto baking sheet and press dough down.
Bake for 8-10 minutes or until sides start to brown.
