In a large pan over medium heat, add in olive oil and turkey, cook turkey until almost cooked through (about 6 mins)
Push turkey aside in the pan and add in onion. Saute for 7 mins then add in Carrots, garlic, ginger. Saute for 2 more mins then stir the turkey and vegetables together all into one.
Pour in chicken broth and mix thoroughly. Add in cabbage, soy sauce, apple cider vinegar, salt and pepper. Stir well. Let it cook for an additional 15 mins.
Add in sesame oil, mix well and top with chopped scallions.
