Finely chop the green onion. Set Aside. Mince the ginger. Set Aside.
In a medium bowl combine chicken, half the ginger, salt, pepper, half the onions and half ( 3 TBSP) of soy sauce. Mix until equally incorporated.
Take a wonton wrapper and dampen the edges of each side with your fingers. Place a small amount of the chicken filling. Then fold diagonally so it’s not in the shape of a triangle. Press the sides firmly together. Then fold the two outside corners in together so they touch. Repeat to make the rest of the wontons.
In a large pot over a large flame, combine the chicken broth, water, remaining soy sauce and ginger. Heat until boiling. Then add in the remaining onions and the filled wontons and reduce heat to simmer (uncovered) for 8 mins.
