Cook 2 strips of bacon using our perfect bacon recipe. Crumble and set aside.
Preheat the oven to 425. Spray a cupcake tin with cooking spray, and add in breadcrumbs to the bottom and sides of the cups.
Boil water in a pot, and add in elbow macaroni, cook until al dente. Drain and set aside.
In a saucepan, combine Cheese, milk, pepper, salt, garlic powder, flour until mixture is at a low simmer. Then turn the heat off, and add in the egg yolk while continuously stirring the cheese mixture until fully incorporated.
Add the cheese into the macaroni and stir until evenly distributed. Scoop the macaroni into the greased and breaded cupcakes tin.
Top the mac and cheese with some parmesan cheese, remaining breadcrumbs and crumbled bacon.
Bake for 35-40 mins or until the tops are golden brown.
Shake to release mac and cheese bites from the pan. Serve and enjoy!
