Low Calorie Wonton Soup

Normally wonton soup is made with pork which makes it super rich, fatty, and delicious. To make this lower calorie, I used ground chicken instead, which makes it less rich but healthier. 

This recipe is super simple to make. The hard part is mustering up the patience to fill and fold all of the wontons. Luckily this recipe doesn’t require any special folding technique. It’s mostly just folding the wrapper in a diagonal . I added an extra fold connecting the two corners for good measure. But the ones I didn’t fold turned out just as good. 

It’s really important that after the wontons are added to the broth that the heat is reduced and is uncovered. Otherwise the wontons will overheat and explode.

Ingredients

  • 5 green onion stalks
  • 1 lb Ground Chicken
  • Ginger about 2 inches
  • Pinch of Salt
  • Pinch of Pepper
  • 64 oz Chicken Broth
  • 3 cups Water
  • 1 Package Wonton Wrappers
  • 6 Tablespoons Soy Sauce

Instructions

  • Finely chop the green onion. Set Aside. Mince the ginger. Set Aside.
  • In a medium bowl combine chicken, half the ginger, salt, pepper, half the onions and half ( 3 TBSP) of soy sauce. Mix until equally incorporated.
  • Take a wonton wrapper and dampen the edges of each side with your fingers. Place a small amount of the chicken filling. Then fold diagonally so it’s not in the shape of a triangle. Press the sides firmly together. Then fold the two outside corners in together so they touch. Repeat to make the rest of the wontons.
  • In a large pot over a large flame, combine the chicken broth, water, remaining soy sauce and ginger. Heat until boiling. Then add in the remaining onions and the filled wontons and reduce heat to simmer (uncovered) for 8 mins.
