Pork rinds often get a bad wrap for being unhealthy, weird, gross or a low class snack, but with the keto diet on the rise and plenty of boutique pork rind brands hitting the shelves this ‘weird’ snack food has found itself suddenly in the spotlight. For a snack food that was often on the bottom shelf of the chip aisle I’ve got to say it’s definitely proving its prowess as a breadcrumb alternative. Breading chicken, or anything for that matter, in pork rinds will give you the crispiest crust without the fryer! Mix pork rinds with a bit of cheese and you’ve got a crispy, cheesy winning combination that you’ll be coming back to for ages. This easy pork rind crusted garlic parmesan chicken will be just that recipe. Easy to whip up and sure to please the masses!
Pork Rind Crusted Garlic Parmesan Chicken
Ingredients
- 1 Pound of boneless skinless chicken breast or thighs cut into 1 to 2 inch cubes
- 1 Standard 2.5oz Bag pork rinds
- ¼ Cup parmesan cheese
- 1 Teaspoon garlic powder
- ½ Teaspoon Paprika
- Pepper to taste if desired
- 1 Egg
Instructions
- Preheat oven to 375 degrees, take out a baking sheet and spray with non-stick cooking spray. I like to line with foil for easy cleanup.
- Using a food processor, process the bag of pork rinds until they resemble bread crumbs. If you don’t have a food processor use a rolling pin and crush by hand in a plastic bag.
- Once crushed, combine the pork rinds with the cheese, garlic powder and paprika and mix well to combine
- Separately, scramble the egg in a bowl with about one tablespoon of water and set aside
- Set up an assembly station where you can dip the chicken cubes in the egg wash and then roll in the pork rind breading
- Dip each chicken cube in the egg wash, coat in the pork rind breading and then place on the baking sheet
- Once all of the chicken cubes have been prepared bake in the oven for 30 to 35 minutes until crispy and slightly browned on top
- Remove from the oven and allow to cool on the baking sheet for a few minutes
- Remove from the baking sheet and serve warm
