Chicken Parmesan Zucchini Boats

Its Zucchini Season! And these Chicken Parmesan Zucchini boats are super simple to make. It’s a light twist to the classic chicken parmesan that leave you feeling full and satisfied. I also like that it pairs meat and a veggie which also answers the question of what vegetable should I make for dinner?. 

We start off by browning some ground chicken, then adding pre-made marinara sauce ( Sure make your own if you are ambitious but a pre-made sauce will work just as well) . Add in some cheese and place onto the zucchini which then bakes in the oven. It’s also Low Calorie ( depending on the amount of cheese you add), gluten free and keto friendly. 

The most challenging part of making anything with Zucchini is to be careful not to overcook it. Or else it will be too mushy. I found that 25 mins of baking a quick flash broil did the trick. It was sweet and had just enough crunch to retain the structure and feel like I’m eating something more substantial than vegetables. But every oven is different so keep an eye out and adjust as necessary. 

The most fun part about this dish? You can eat it without utensils, hotdog style, if you choose. Less dishes, less clean-up.

Chicken Parmesan Zucchini Boats

Ingredients

  • 1 lb Ground Chicken Breast
  • Pinch of Salt
  • Pinch of Pepper
  • Pinch of Garlic Powder
  • 1 tsp olive oil
  • 2 cups Marinara Sauce (half jar)
  • 1 cup Mozzarella
  • 1 cup Parmesan
  • 3 Zucchinis

Instructions

  • Preheat Oven to 400 Degrees
  • Combine the chicken, Olive Oil, salt, pepper and garlic powder into a medium sized pan. Cook on medium heat until browned.
  • Then add in the marinara sauce and set on low heat. Cook for about 8 mins or until the sauce is soaked into the chicken.
  • Then add in the parmesan, half of the mozzarella and stir until fully incorporated. Turn off the heat and set aside.
  • Wash and slice the Zucchini in half length-wise, then using a spoon scoop out the seeds on the inside leaving a well.
  • Place zucchini into a greased 9x13in casserole dish.
  • With a spoon fill the zucchini wells with the chicken mixture.
  • Add the rest of the mozzarella to the top of the zucchini boats.
  • Bake for 25 mins.
  • Then change your oven to broil mode, and cook for another 2-3 mins or until cheese is browned a little.
