Easy Strawberry Bundt Cake

It’s summertime and that means lots of fresh fruit!  My mom and I are both big fruit fans, especially berries.  When I was visiting recently and she requested I make a special dessert for dinner I knew I could whip something up with the fresh strawberries she had in the fridge.  Since I was in a bit of a rush I opted to use a box cake mix, but knew I could enhance it by adding some pudding mix, and of course some of those strawberries!  Using both strawberry puree and strawberries in combination with the pudding mix yielded an incredibly flavorful and moist cake.  Topped with some simple strawberry cream cheese frosting and whipped cream this cake turned into a truly decadent treat.  Whip this up for a party and you’ll be lucky to have leftovers.

Easy Strawberry Bundt Cake

Ingredients

  • Ingredients for cake:
  • 1 Box Duncan Hines perfectly mois classic white cake mix
  • 2 eggs
  • 1.34 Oz box 4 servings vanilla pudding (1 box)
  • Cup greek yogurt
  • 2 Cups fresh or frozen strawberries
  • Ingredients for frosting:
  • 1 pint or roughly 2 cups strawberries
  • 1 8 Oz package cream cheese softened
  • ½ cup butter softened
  • 1 teaspoon vanilla
  • 2 cups confectioners' sugar

Instructions

  • Preheat oven to 350 degrees, or the temperature on your box cake mix and prepare your desired cake pan per the directions on the cake mix
  • Puree 1 cup of your strawberries
  • In a medium bowl mix together the eggs, yogurt and strawberry puree
  • Add the box cake mix and pudding mix to the wet ingredients and mix well to combine
  • Fold in the remaining cup of strawberries
  • Pour your batter into your cake pan and bake according to the directions on the cake mix
  • While the cake is baking prepare the frosting
  • Puree the additional 2 cups of strawberries in a blender or food processor
  • Using a hand mixer or stand mixer combine the cream cheese and butter until creamy and smooth
  • Add in the vanilla extract and then gradually beat in confectioners' sugar until its smooth
  • Lastly, fold in strawberry puree until frosting is desired consistency and flavor
  • After the cake has cooled frost and serve with whipped cream and additional berries!
