American Pie

Today is the 4th of July, also known as Independence day. The day where we honor the independence of our nation by overeating at BBQs and decorating everything in red, white and blue. Can you think of anything more stereotypically American ? Joking aside, this pie is the perfect dessert for the fourth of July BBQ. It is the perfect balance of sweet, light, crisp and refreshing that we crave in a summer pie. And most of all, patriotic with addition of the upper pie crust decorations.

Although it may look intimidating, this pie has less than 10 ingredients and with pre-made pie crust for the top and bottom of the pie,  it is a breeze to make. If you are adventurous enough, go ahead and make your own pie crust!  But I wanted something quick, easy and delicious.

Ingredients

  • 1 Premade pie crust in pan
  • 1 Premade roll out pie dough
  • 1 pint Blueberries
  • 1 quart Strawberries
  • 1 3/4 cups Sugar
  • 4 TBSP Cornstarch
  • 3/4 cup Water
  • 1 TBSP Lemon
  • 1/8 tsp Cinnamon

Instructions

  • Preheat the oven to 400 degrees. Fork some holes into the premade pie crust for ventilation. Bake for 10 mins until the crust is golden brown.
    Let the premade rolled out pie crust thaw on the counter for later use.
  • Cut the strawberries into quarters. Reserve half the strawberries. Put the other half into a saucepan with 1 cup of sugar, heat on medium until boiling.
  • Mix together 3 TBSP of the cornstarch and 3/4 cup of water. Once the strawberries are boiling, gradually add in this mixture. Continue to cook the strawberries until it thickens ( about 10 mins).
  • Mix together the blueberries, cinnamon, lemon, remaining 3/4 cup of sugar and 1 TBSP cornstarch in a separate bowl. Set aside.
  • Using some aluminum foil as a divider, divide the pie to separate a quarter from the other 3/4 of the pie. Put the reserved uncooked strawberries in the 3/4 portion and slowly pour over the cooked strawberries. Then pour in the mixed blue berries into the 1/4 portion. Bake the pie for 40 mins
  • While that is baking, cut out stars and stripes from the thawed roll out pie crust. Put the stars and stripes on parchment paper on a baking sheet. Bake for 10 mins.
  • Assemble your baked stars and stripes on the pie. Slice and Enjoy
