I went apple picking this past week which left me with a lot of apples and a lot of baking possibilities. Apple Crumb and Apple crisp are by far my favorite. I love the taste of the apples with the cinnamon and spices. I decided to put a twist on a classic apple crumb by adding a buttery shortcake layer to bottom. The shortbread adds some flavor and balance to the explosion of spice in the apples. Id recommend tart apples to balance out the sweetness of the shortbread and crumble topping.
These can also be easily split into bars. Good for breakfast and also as a dessert.
Apple Crumb Shortbread
Ingredients
- 1 ¾ cups flour
- ½ cup + 2 TBSP Sugar
- 1 ½ sticks butter room temperature
- 3 large apples
- 2 TBSP cornstarch
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp ginger
- Pinch of salt
- ½ cup quick Oats
- ¼ cup packed brown sugar
Instructions
- Preheat oven to 350, Line a 9x13 pan with aluminum foil and baking spray
- In a mixer, beat 1 stick of butter, then add in 1 ½ cups of flour, ½ cup sugar until it is fully mixed and looks like wet sand. Press the dough into the aluminum foil lined pan and pack down. Then using a fork poke holes in the dough. Bake 20-25 mins.
- Peel, Core and dice apples. Toss with the remaining 2 TBSP sugar, cornstarch, 1 tsp cinnamon, ½ tsp nutmeg, ¼ tsp allspice and ¼ sp ginger.
- Arrange apples in a layer over the cooked shortbread.
- In a small bowl combine the remaining ¼ cup flour, remaining ½ stick butter, oats, brown sugar, 1 tsp cinnamon, ½ tsp nutmeg, ¼ tsp allspice and ¼ sp ginger. Mix together until crumbs form. Sprinkle crumb mixture over the apple layer.
- Bake the entire thing for 30 mins until the topping is golden brown.
- Let it cool and enjoy
