Blue Cheese and Date Stuffed Apricots is the perfect refreshing summer appetizer or snack. And its pretty simple to make. No Baking or cooking involved. Just chopping and assembling. Perfect treat to bring with you to the potluck BBQ. Everyone will be amazed at how sophisticated your dish is. The saltiness of the blue cheese is complimentary to the sweetness of the dates and the overpowering punch of flavor in that mixture is neutralized by the apricot half. This recipe is best with apricots. but really any stone fruit ( peaches, nectarines plums, etc. can be used). If you are allergic to nuts or just don’t prefer almonds, the recipe is just as good if you leave that ingredient out.

Ingredients

  • 1/4 cup chopped unsweetened pitted dates
  • 3 1/2 tbs crumbled blue cheese
  • 4 apricots halved and pitted
  • 1 1/2 tbs Honey
  • 2 tbs Sliced Almonds

Instructions

  • Cut the Apricots in half, Set Aside. Cut the Dates into small pieces. Set Aside
  • In small bowl, mix the dates, cheese and sliced almonds.
  • Fill apricot halves with date mixture, then drizzle with honey and sprinkle with almonds.
