When the weather finally gets warm I’m always craving light and refreshing side dishes. The veggie that really epitomizes refreshing to me is cucumbers, crisp, juicy, mild and they can pair with just about any flavor.
Strawberries were in season when I devised this recipe and I went a bit crazy purchasing more containers than I could possibly finish before they spoiled. I also had a few cucumbers, because they are generally a staple for me. Looking in my fridge I realized that putting these two together would make a very refreshing combination. Paired with some fresh dill and mild feta cheese this combination came together as a perfect spring or summer salad with no dressing needed!
This salad is also excellent for making lettuce wraps. Pair with some grilled chicken and lettuce leaves and you’ve got a super healthy lunch or dinner!
Cucumber and Strawberry Salad
Ingredients
- 1 16 oz container strawberries
- 3 Cucumbers
- 1 Bunch dill
- 1 Cup crumbled feta cheese
Instructions
- Peel cucumbers and finely dice
- Remove tops of strawberries and finely dice
- Remove stems and finely mince dill
- In a large bowl combine cucumbers, strawberries, dill and feta, mix well to combine
