Garlic Lemon Roasted Potatoes

So often can potato recipes feel greasy, unfulfilling and just all around bleh. This recipe is colorful, healthy, and fresh. The garlic is good for lowering cholesterol and gives it a hearty kick. The lemon adds a refreshing twist and cuts the heaviness of the potatoes.  All while the parsley bonds the two flavors.  Just throw these in the oven, cook and toss with the remaining ingredients. Simple, easy, done.

Garlic Lemon Roasted Potatoes

Ingredients

  • 3 lbs Small multi colored potatoes
  • 4 TBSP Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 TBSP Parsley
  • 2 TBSP Garlic
  • 2 TBSP Lemon
  • 2 TBSP olive oil

Instructions

  • Preheat oven to 400 degrees
  • Cut the potatoes in half, spread on a baking sheet and drizzle up to 4 TBSP olive oil, salt and pepper.
  • Bake for about an hour or until potatoes are golden and steaming.
  • Toss with lemon juice, parsley, garlic and remaining olive oil. Serve and enjoy.
