Fajita Tacos

This is a recipe refresh, taking old recipes, mash it up with new recipes to create new flavors and simplifying for busy people.  What makes this recipe different from the usual taco? We are taking elements from Fajita recipes and elements from classic Tacos recipes to make a flavor explosion. We are preparing the veggies fajita style, seasoning it like chili and preparing like a taco. The secret to these fajita tacos is the chili seasoning. That’s right, chili seasoning.  To me, taco seasoning and fajita seasoning can both be overwhelming to the palette and create a rather artificial taste. So instead I used 1/4 packet of chili seasoning to flavor the chicken and veggies. In the supermarket they sell prepackaged seasoning packets to make this quick and easy.  If you rather make your own using the spices at home that okay too. This is just a quick and easy shortcut.

This recipe pairs well with cheese, sour cream, and cilantro. But assemble according to how you like your tacos! Taco-bout an easy recipe.

Fajita Tacos

Ingredients

  • ½ white onion
  • 1 green pepper
  • 1 TBSP olive oil
  • 1 pound chicken breast
  • ¼ packet of chili mix
  • 1 package of corn tortillas
  • ½ cup mexican cheese
  • ¼ cup salsa
  • ¼ cup sour cream
  • ¼ TBSP cilantro

Instructions

  • Slice the onion and peppers into slices. Place into a large frying pan under medium-low heat with olive oil. Saute until the onions become translucent and the peppers become soft.
  • While the veggies are cooking, cut the chicken into strips. Set aside.
  • Once onions and peppers are soft, add in the chicken. Saute until chicken is almost cooked through. Then add in ¼ of a package of chili seasoning. Stir until everything in the pan is evenly covered. Then fry for another 5 mins.
  • Set aside.
  • In a separate frying pan over high heat, place a corn tortilla until its toasted, then flip to toast the other side.
  • Plate the tacos with the corn tortilla on the plate followed by a sprinkle of cheese, the chicken/onion/ pepper mixture, salsa and sour cream topped with cilantro.
