Gingerbread Biscotti

Biscotti is a fan favorite in this house. I always love trying different ways to make biscotti fun throughout the year. So for the holidays I’ve been playing around with some Christmas flavor. And nothing says Christmas like gingerbread. There is something about gingerbread that warms you up from the inside. Perfect for the start of the cold weather season. Because of the molasses, this biscotti is a little chewier than most, but this is by design!

 

Gingerbread Biscotti

Ingredients

  • ½ cup butter room temperature
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 TBSP Molasses
  • 3 cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • 1 ½ tsp ginger
  • ¾ tsp allspice
  • ½ tsp ground cloves
  • ¼ tsp black pepper
  • 1-2 TBSP Confectioners sugar

Instructions

  • Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
  • Whisk flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, cloves, black pepper in a separate bowl. Set aside.
  • Beat butter and sugar together in a bowl until mixture is creamy. Then beat in eggs, vanilla extract and molasses.
  • Gradually add in the Flour mixture to make the dough.
  • Form dough into a ball, cut into halves. Shape each half into logs, then flattening the logs. Place logs onto the prepared baking sheet.
  • Bake for 25 mins.
  • Cut logs into slices and lay the slices on the parchment-lined baking sheet.
  • Bake biscotti until crispy, about 15 mins each side
