Nothing is more irresistible than fresh out of the oven pretzels. Nothing. Every Aunties Anne’s shop is proof of this. Today I made Homemade Pretzels. The trick with this recipe is having patience to let the dough properly rise, and having a trusty thermometer to ensure that the water for the yeast is the proper temperature. Although typical pretzels are just baked, I decided to boil them first to form a crisp crust (similar to a bagel). This really made all the difference. Enjoy with mustard or cut it in half and use it as bread for a sandwich.

Ingredients

  • 1/2 cup milk
  • 1/2 cup water
  • 1 tsp honey
  • 1 package Fleischman rapid rise yeast
  • 3 cups bread flour
  • 1 tsp salt
  • 3 TBSP brown sugar
  • 3 TBSP melted butter
  • 5 cups water
  • 3 TBSP baking soda
  • 1 egg
  • 3 TBSP coarse salt

Instructions

  • Put milk, water, honey in a mug. Put it in the microwave for a min. Using a thermometer test to see if the mixture is about 110 degrees, adjust temp to be warmer or colder if necessary. Once its about at 110 degrees, add in flesicheman rapid rise yeast. Set aside for 10 mins or so until it rises.
  • In a seperate bowl, mix bread flour, salt, and brown sugar in a bowl. Once throughly combined add in melted better and risen yeast mug. Knead into a dough.
  • Set aside for 2 hours in a warm spot to rise.
  • After 2 hours, knead dough again and set aside for another hour.
  • Cut dough into section. Roll out each section. Once rolled out, assemble it into pretzel form.
  • Boil water in a large pan. Add 5 cups of water. Once boiling add baking soda. Stir in baking soda. .
  • Add in pretzels, wait 45 seconds for them to puff out a little more and then take them out. Let them dry on a paper towel. This step forms a crust.
  • Preheat oven to 425
  • Put the pretzel on a baking sheet with a silicone sheet or parchment paper. Brush an eggwash (whisked egon the top and sprinkle with salt. Bake for 15 mins or until browned. Top with melted butter.
