Lemon Poppy Glazed Brownies! I never thought that you could make a brownie without chocolate in it. But here we are. I suppose one could call these bars, but I like the brownie reference since it perfectly describes the consistency to be like a fudge-y cake .  This is the perfect summer treat. The lemon is very refreshing and offsets the sweetness, while the poppy seeds adds a nutty flavor. Although the glaze is always optional, I feel like this really pulls it all together.

As I was making this I noticed that the dough was taking on a dough like consistency. But when I put it in the oven the batter liquefied and settled in.  

Do wait until the bars are completely cooled before glazing the top, otherwise the glaze will run and it will be a sticky mess.

Lemon Poppy Glazed Brownies

Ingredients

  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • zest from 1/2 lemon
  • 3/4 cup all-purpose flour
  • 1/2 tbsp poppy seeds
  • Glaze
  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • zest from 1/2 lemon

Instructions

  • Preheat oven to 350 degrees.
  • Place parchment paper in the bottom of an 8x8 square pan
  • In a large bowl whisk together butter, sugar, eggs, lemon juice, salt and zest. Add flour and mix until just combined.
  • Then add poppy seeds and stir in by hand. Pour into the lined pan and spread into an even layer. The batter will be a little doughy and less liquidy.
  • Bake for about 20 minutes or until edges are brown and the middle is set. Let it cool.
  • While the lemon poppy seed bars are cooling, combine the glaze ingredients and whisk them together. Pour it over the cooled bars and spread out into an even layer over the top. Cut into squares and serve.
