Strawberry and Blue Cheese Flatbread ( Gluten Free)

Don’t call it a Pizza or you will have soooo many people hating before they try it!! For this reason we are going to carefully call this a Strawberry Blue Cheese “Flatbread” . Aka a non traditional “pizza”. Or better yet, just make it, and put it out for guests to try without a label. Labeling isn’t cool these days anyways.

This can either be gluten full or gluten free depending on the pizza crust you choose. I opted to go gluten free with this one.  This……flatbread…. is a sweet summer pick me up with seasonal fruit and some Salty blue cheese to balance the honey and strawberries. This is one of the few recipes where I think not skimping on the spices makes a difference. The thyme adds some earthy bitterness to the delicate sweet and savory balancing act.

Strawberry Blue Cheese Flatbread (gluten free)

Ingredients

  • 1 gluten free pizza crust
  • 1 cup Mozzarella cheese
  • ½ cup Blue Cheese
  • 6 Strawberries thinly sliced
  • 1 TBSP honey
  • 1 TBSP olive oil
  • Salt and Pepper to taste
  • Fresh Thyme

Instructions

  • Preheat the oven to 375 degrees
  • In a small bowl combine olive oil, honey, salt and pepper until it’s thoroughly mixed. Set aside.
  • Place the pizza crust on an oven safe cookie sheet. Sprinkle the crust with mozzarella cheese and blue cheese. Then place on the strawberries so that it’s evenly covering the pizza. Then drizzle the honey mixture on top.Top with fresh thyme for garnish.
  • Bake for 10 mins or until the cheese or crust starts to brown.
