Apple Dijon Bacon Spinach Salad

lemon juice

extra virgin olive oil

finely chopped bacon

minced fresh garlic
Instructions
In a small bowl place spinach, apple, onion aside in a bow in the refrigerator until you are ready to serve.
In a small bowl, make the dressing: Whisk together the lemon, mustard, sugar, pepper, salt and olive oil.
In a small non stick pan, cook the bacon on medium high until crispy, and garlic and stir for 30 seconds or until browned.
Remove pan from heat, add garlic and crushed bacon to the vinaigrette.
Mix thoroughly and serve over spinach mixture.
