Apple Dijon Bacon Spinach Salad

Salad. Wow. Exciting. Groundbreaking. These were my exact thoughts as I attempted to make this salad. People tend to dismiss salads as boring or too simple. But this recipe is anything but boring. However it is simpler than it looks! 

What I love about this salad is that you can make a lot of it in advance if you are planning on having company over. The crumbled bacon can be done days in advance if needed.  Check out our post on how to cook the perfect bacon. You can also make the vinaigrette in advance as well. Then when you are ready to server combine the bacon, vinaigrette and salad all in one. 

Apple Dijon Bacon Spinach Salad

Ingredients

  • 6 cups baby spinach
  • 1 apple sliced thin
  • ½ cup thinly sliced white onion
  • ½ cup lemon juice
  • 2 tsp dijon mustard
  • 2 TBSP sugar
  • ½ tsp coarse blac pepper
  • ½ tsp coarse sea salt
  • 2 TBSP extra virgin olive oil
  • ¼ cup finely chopped bacon
  • 2 tsp minced fresh garlic

Instructions

  • In a small bowl place spinach, apple, onion aside in a bow in the refrigerator until you are ready to serve.
  • In a small bowl, make the dressing: Whisk together the lemon, mustard, sugar, pepper, salt and olive oil.
  • In a small non stick pan, cook the bacon on medium high until crispy, and garlic and stir for 30 seconds or until browned.
  • Remove pan from heat, add garlic and crushed bacon to the vinaigrette.
  • Mix thoroughly and serve over spinach mixture.
