finely chopped (about ½ cup)

Instructions
Preheat your oven to 350 degrees and grease a mini muffin pan
In a large bowl, combine the cornmeal, flour, baking powder and salt
In a separate bowl whisk the egg and milk
Add the wet ingredients to the dry ingredients just until combined
Stir in the chopped onions
Evenly distribute the batter in the muffin tin
Bake in the oven for 15 to 20 minutes or until just golden brown
Let cool and serve with your favorite dinner or breakfast
