Baked Hush Puppies

Hush puppies, corn bread, corn muffins, I’ve always got to have one of these to go with a big bowl of chilli or some southern BBQ.  I’m always testing out new variations and these baked hush puppies are a great savory corn option that is a bit lighter than the traditional fried version.  They’re also great because they are bite sized so you can have just one or two or a whole bunch!

Baked Hush Puppies

Ingredients

  • 1 Cup yellow cornmeal
  • ¼ Cup all-purpose flour
  • 1 ½ Teaspoons baking powder
  • ½ Teaspoon garlic powder
  • ½ Teaspoon salt
  • 1 Egg
  • 3/4 Cup milk
  • 1 Small onion finely chopped (about ½ cup)
  • 1 Tablespoon honey

Instructions

  • Preheat your oven to 350 degrees and grease a mini muffin pan
  • In a large bowl, combine the cornmeal, flour, baking powder and salt
  • In a separate bowl whisk the egg and milk
  • Add the wet ingredients to the dry ingredients just until combined
  • Stir in the chopped onions
  • Evenly distribute the batter in the muffin tin
  • Bake in the oven for 15 to 20 minutes or until just golden brown
  • Let cool and serve with your favorite dinner or breakfast
