Funfetti Cupcakes with Simple Cream Cheese Frosting

Ingredients
Ingredients for Cupcakes
¾Cupflour
½Cupsugar
½Cupgreek yogurt
¼Cupmilk
2Egg whites
6Tablespoonsbuttersoftened
1Teaspoonbaking powder
1 ½Teaspoonsvanilla
¼Cupsprinkles
Ingredients for Cream Cheese Frosting
4ozCream cheesesoftened
1 to 2Tablespoonsmilkor as needed
½Teaspoonvanilla
1 ½cupspowdered sugar
Instructions
Preheat oven to 350 degrees and grease your desired cupcake tin
Combine the dry ingredients in a large bowl and whisk together
Combine the softened butter and yogurt, then add in vanilla, egg whites and milk. It’s important that the butter is soft so that it combines easily with the other wet ingredients. Don’t worry if a few lumps appear.
Pour the wet ingredients into the dry ingredients and mix well
Lastly, fold the sprinkles into the batter
Divide the batter evenly into your cupcake tin
Bake at 350 degrees for about 20-25 minutes or until the centers are springy and slightly golden around the edges
Remove from the oven and let cool
While the cupcakes are cooling, prepare the frosting
If you have a mixer, beat the cream cheese with 1 tablespoon of milk and the vanilla until smooth and creamy. This can be done by hand, it will just be a bit of an arm workout.
Next, slowly add the powdered sugar to the cream cheese mixture ¼ to ½ a cup at a time, making sure to mix out any lumps.
Beat until smooth and fluffy, this will be easier if you are using a mixer
Add more milk if needed for spreading or decorating consistency
Lastly, frost your cupcakes and top with additional sprinkles for festive flair!
