Funfetti Cupcakes with Simple Cream Cheese Frosting

Sprinkles make everything feel fun and like a cause for celebration.  Birthday or not this super moist cupcake recipe will make any desert time feel fun and festive.  This recipe comes together quickly and is paired with a simple cream cheese frosting, which doesn’t require the finesse and expertise of preparing a typical buttercream. It is a bit on the sweet side though, so decorate sparingly.  What I also love about this recipe is that it’s a small batch, yielding between 6 and 9 cupcakes, depending on the size of your cupcake tin. It’s perfect for when you want a sweet treat for a small party, get together, or maybe just desert for the week. I recently made this recipe for a small family birthday dinner and the whole batch was gone before the night was out! Fun fact, using egg whites in this recipe rather than a whole egg keeps the color of the cake more white so that the sprinkles really stand out.

Ingredients

  • Ingredients for Cupcakes
  • ¾ Cup flour
  • ½ Cup sugar
  • ½ Cup greek yogurt
  • ¼ Cup milk
  • 2 Egg whites
  • 6 Tablespoons butter softened
  • 1 Teaspoon baking powder
  • 1 ½ Teaspoons vanilla
  • ¼ Cup sprinkles
  • Ingredients for Cream Cheese Frosting
  • 4 oz Cream cheese softened
  • 1 to 2 Tablespoons ​milk or as needed
  • ½ Teaspoon vanilla
  • 1 ½ cups powdered sugar

Instructions

  • Preheat oven to 350 degrees and grease your desired cupcake tin
  • Combine the dry ingredients in a large bowl and whisk together
  • Combine the softened butter and yogurt, then add in vanilla, egg whites and milk. It’s important that the butter is soft so that it combines easily with the other wet ingredients. Don’t worry if a few lumps appear.
  • Pour the wet ingredients into the dry ingredients and mix well
  • Lastly, fold the sprinkles into the batter
  • Divide the batter evenly into your cupcake tin
  • Bake at 350 degrees for about 20-25 minutes or until the centers are springy and slightly golden around the edges
  • Remove from the oven and let cool
  • While the cupcakes are cooling, prepare the frosting
  • If you have a mixer, beat the cream cheese with 1 tablespoon of milk and the vanilla until smooth and creamy. This can be done by hand, it will just be a bit of an arm workout.
  • Next, slowly add the powdered sugar to the cream cheese mixture ¼ to ½ a cup at a time, making sure to mix out any lumps.
  • Beat until smooth and fluffy, this will be easier if you are using a mixer
  • Add more milk if needed for spreading or decorating consistency
  • Lastly, frost your cupcakes and top with additional sprinkles for festive flair!
