Banana Pancakes (3 Ingredient)

I love this recipe because it is super simple to make, and it’s fast with only 3 ingredients. Yes that’s right. Banana as the content, Egg as the binder and to make it fluffy and cinnamon for taste. You don’t even need a mixer for this one. Just mash a ripe banana with a fork and whisk it all together. I have to admit, it has ore of a banana french toast taste but its delicious and the cinnamon just adds that extra something. Its packed with natural protein from the eggs, and potassium from the banana. It also just so happens to be Dairy free, Gluten free and overall delicious.  Its low calorie as long as you can restrain yourself from coating it in maple syrup. But hey, life is short, live a little. 

Banana Pancakes

Ingredients

  • 1 ripe Banana the riper the better
  • 2 Eggs
  • 1 tsp cinnamon

Instructions

  • In a medium bow, smash the banana with a fork until it turns into a mush
  • Add in the eggs and cinnamon and whisk until fully combined.
  • Heat a frying pan to medium heat with a little cooking spray on the bottom
  • Spoon in the batter and cook until small bubbles form in the batter. Then Flig and cook until golden on each side.
  • Serve with maple syrup and enjoy.
