Creamy Snap Peas and Pancetta

This Creamy Snap Peas and Pancetta dish is a “snap” to make. Its easy as 1,2,3. 1. prep the pancetta, 2 cook the peas, 3 add in the sauce. Its that easy! If your local grocery store doesn’t have pancetta or its too expensive for your liking, you can swap for bacon. Pancetta is a great choice because it has greasy salty complexity that brings out he flavors in the snap peas and is balanced with the cream sauce. However because the bacon will be thinner you way need to add more of it in order to get the same level of flavor. Id say about 1.5 cups of bacon. This recipe makes a lot of food. I found that its the perfect serving size for a larger gather where you are preparing a side dish. But for the ordinary meal, cut the recipe in half.

Creamy Snap Peas and Pancetta

Ingredients

  • 1 bag of frozen Peas
  • 1 bag of snap peas
  • 1 bag of snow peas
  • 4 oz pancetta
  • 1 ½ cup chicken broth
  • ½ cup heavy cream
  • Pinch of Salt
  • Pinch of Pepper

Instructions

  • Cook the pancetta in a frying pan over medium heat. Fry until the pancetta is a golden brown. Transfer to a plate with a paper towel to soak up the oil. Set Aside.
  • In a large pot, on high heat. Fill half way with water and add in the Peas and Snap peas until they are cooked through. Bright green yet a little firm. Drain the pot.
  • After the peas have been drained, add in the chicken broth, heavy cream, salt and pepper until it begins to boil
  • Combine all the snap peas, sauce and pancetta together in a casserole dish and serve
