Cookies and Cream Cupcakes

Cookies and Cream is one of the best dessert combinations ever. So its only natural that we turn this classic combination into a cupcake. I tend to make cupcakes as opposed to cake because its easier to portion out based on number of people. Additionally it doesn’t carry the guilt of taking too big of a piece.  To make these cupcakes taste like cookies and cream, I used the original cookies and cream cookie, also known as OREOs. For this recipe I used one packet of oreos for the recipe as well as for garnish.  To decorate, I used a piping bag and a Witon 1D tip. Please note that the Oreo crumbs in the frosting must be very very fine or else it will get caught in the piping tip!

Ingredients

Cupcakes:

  • 1 stick unsalted butter room temperature
  • 1 cup sugar
  • 2 egg whites
  • ¾ cup sour cream
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 ¼ cup flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup crushed oreos

Frosting:

  • 1 stick unsalted butter room temperature
  • ½ cup shortening
  • 1 ts vanilla extract
  • 2 cups powdered sugar
  • 1 cup finely blended oreos

Instructions

Cupcakes:

  • Preheat oven to 400, line cupcake pan with liners.
  • Crush whole oreos into small pieces. Set aside.
  • In a mixing bowl, combine butter and sugar with an electric mixer, 1-2 mins until fluffy. Add in egg whites, and mix with a spatula. Add in sour cream, milk, vanilla, lightly beat with a mixer,
  • In a separate bowl combine flour, baking soda, salt. Gradually add in flour mixture to the wet ingredients until thoroughly combined. Lastly add in crushed oreos. Mix until incorporated.
  • Fill cupcake liners ½- ¾ full.
  • Bake for 5 mins at 400, then lower temperature to 350 and bake for an additional 10 mins or until a toothpick once inserted comes out clean. ( cook times may vary based on ovens)

Frosting:

  • Crush oreos in a food processor as fine as you can make it.
  • Combine butter, shortening, and vanilla extract with an electric mixer. Once combined, gradually add in powdered sugar until it is the desired texture. Then add in finely blended oreos.
  • Pipe onto cupcakes. I used a Wilton 1D tip
