Turkey and Asparagus Roulade

My inspiration for this recipe also came about when I got over zealous during asparagus season and bought several bunches from my corner produce stand. It really is one of my favorite veggie!  Organic ground turkey was also on sale that week and I’d been considering different stuffed meat recipes as basic baked and grilled was starting to feel boring. Wanting to keep it reasonably healthy, but while adding some flavor I thought why not dress up the ground turkey with turkey bacon and add in the asparagus for some greens.  Inspiration hit and the turkey and asparagus roulade was born! Baked in the oven and sliced into sections it makes for a beautiful display at a dinner party, or as an easy lunch packed with a side of veggies.

Turkey and Asparagus Roulade

Ingredients

  • 1 lb ground turkey
  • 1 8 oz package turkey bacon or 8 slices
  • 1 Large bunch thin asparagus pencil sized
  • ¼ Cup parmesan cheese
  • 1 Egg
  • 2 Cloves garlic
  • 1 TBSP olive oil
  • 1 tsp adobo optional
  • Salt & Pepper to taste

Instructions

  • Preheat oven to 350 degrees
  • Trim your asparagus ends to remove the rough portions. Mince the garlic
  • Heat the olive oil in a saute pan on the stove and and cook until fragrant, set aside
  • In a large bowl mix together the turkey, cheese, egg and adobo, make sure its well combined
  • Lay out a large piece of foil, long enough to spread out your bacon into 4 rows of two pieces each
  • Once you’ve lined up your bacon, spread your turkey mixture evenly over the top
  • Next, line up the asparagus on top of the turkey
  • Once you’ve lined up the asparagus sprinkle the sauteed garlic on top
  • Now it's time to roll! Roll from the short side, using the foil to help you. Once you’ve rolled all the way to the end wrap the foil around the ‘roulade’ leaving a seam at the top, the ends open and place in an oven safe dish
  • Bake in the oven for 35 to 40 minutes or until fully cooked. To finish, open the ‘seam’ in the foil and let bake uncovered 5/10 minutes to crisp up the bacon on the outside. Let the roulade cool, slice and serve!
