Pineapple BBQ Chicken

This week was one of those weeks where I tried something new and hoped for the best. And to my surprise was the most flavorful and complex chicken dish I have ever made. A sweet, spicy, refreshing pineapple chicken had just enough kick to make you say whoa!

This recipe is my new slow cooker set and forget favorite. Which is perfect for the busy summer months where you rather be out in the sun instead of in the kitchen. The refreshing pineapple adds a bit of sweet citrus. And the soy sauce adds a little tang to balance out the typical slow cooker chicken recipe.  The slow cooker also prevents the sauce from baking dry onto the chicken. Which lends itself to a more moist and flavorful chicken than a BBQ grill would provide.

Pineapple BBQ Chicken

Ingredients

  • 1 pound Chicken thigh
  • 16 oz BBQ sauce
  • 3 TBSP Pineapple Juice
  • 3 slices of Pineapple
  • 1 Green Bell Pepper chopped
  • ½ White Onion chopped
  • 2 TBSP Soy Sauce
  • 2 Clove Garlic
  • 1 TBSP Salt
  • 1 TBSP Pepper
  • 1 tsp Red pepper flakes

Instructions

  • Cut the chicken into 1 inch cubes.
  • Chop the Green Pepper and Onion.
  • Combine all Ingredients in a crock pot. Mix until ingredients are mixed thoroughly.
  • Slow Cook on Low for about 4 hours
  • Serve and enjoy
