Salsa Rice

I love making easy renditions of mexican dishes for dinner and my absolute favorite thing to serve on the side is salsa rice.  I love salsa rice because its super easy, customizable and is a good combination of starches and veggies.  Simply cook your added veggies while the rice is in the microwave, combine and your done! Easy peasy!

 

Salsa Rice

Ingredients

  • 1 Cup white basmati rice
  • ½ Cup salsa
  • 1 Cup water
  • 1 Cup sauteed peppers and onions if desired
  • 1 Tablespoon hot sauce
  • ½ Teaspoon red pepper flakes if desired
  • ½ Teaspoon garlic powder
  • 1 Teaspoon salt

Instructions

  • In a microwave safe dish with a lid, combine the rice, salsa, water, hot sauce and spices
  • Stir all of the ingredients with the rice so it's well combined
  • Cook rice in the microwave for about 10 minutes or until just done (no longer hard, but not mushy)
  • While the rice is cooking saute finely chopped peppers and onions, if desired
  • When rice is finished, remove from microwave carefully as it will be hot
  • Stir the rice and mix in the sauteed peppers and onions
  • Return the lid to the dish and allow to stand and cool for 1 to two minutes. After 1 to 2 minutes check the rice to make sure it's done and serve
