Skinny Chocolate Orange Carrot Cake

This is going to be your new favorite guilt free chocolate indulgence. Simple, cheap and convenient ingredients all combined to create an extremely flavorful, moist and decadent chocolate dessert that you’d never guess is low-fat, low-calorie and not too sweet.

This recipe came about because I had some extra carrots in my fridge (the whole bag was only $1.00 at the grocery store!). A box of chocolate cake mix, some orange jello and a desire to make some form of carrot cake that was low calorie.  I scoured the internet for some inspiration and then thought, well chocolate orange sweets are popular and the spices in carrot cake pair well with orange, why not combine them all and see what happens. Well my intuition was correct, this combination rocks!  Chocolate, orange and carrot may not seem like the most obvious combination, but trust me, this is worth a try!

Ingredients

  • 1 Box Chocolate Cake Mix
  • 1 Package Sugar Free Orange Jello small box
  • 3 Cups Shredded Carrots
  • 1 Cup Water
  • 1 ½ Teaspoons Cinnamon
  • ½ Teaspoon Ginger
  • ¼ Teaspoon Nutmeg

Instructions

  • Pre-Heat oven according to box cake mix directions, most likely its 350 degrees
  • Shred carrots, measure out and set aside. 3 cups is about 16oz, 1 lb or a small bag of baby carrots.
  • Grease pan of choice, I recommend a 9 x 13 to get the 12 servings easily
  • Mix all ingredients together and place into baking dish
  • Bake cake according to box mix time or until a toothpick comes out clean. For 9 x 13 pan it should be about 30 minutes.
  • Cake may be delicate so allow to cool in pan before cutting.
  • Slice into 12 sections and enjoy! Dress it up with a swipe of nutella, some shredded coconut, walnuts and a little orange zest!
