Who doesn’t love baked Mac and Cheese? This dish is a classic Americana, and what is even better is that they are formed into individual serving sizes. Which makes it beautiful to display and also Covid friendly since there is no communal pot. Plus you don’t need to worry about getting your dish back since you can display them on a tray or on a plate. This recipe is super easy. Simplified, the steps are as follows: make elbow pasta as directed on the box, make the cheese sauce, mix it together and bake it in a cupcake tray. This recipe can easily be made gluten free simply by using gluten free macaroni and gluten free breadcrumbs. Both easily available in your local grocery store.
Mac and Cheese Bites
Ingredients
- 2 strips crispy bacon
- ¼ cup bread crumbs
- 8 oz Elbow macaroni
- ¾ cup milk
- 2 TBSP flour
- 2 cups cheese sharp cheddar and a mix of cheese
- 1 egg yolk
- Black pepper
- Salt to taste
- Garlic powder to taste
- ¼ cup Parmesan
Instructions
- Cook 2 strips of bacon using our perfect bacon recipe. Crumble and set aside.
- Preheat the oven to 425. Spray a cupcake tin with cooking spray, and add in breadcrumbs to the bottom and sides of the cups.
- Boil water in a pot, and add in elbow macaroni, cook until al dente. Drain and set aside.
- In a saucepan, combine Cheese, milk, pepper, salt, garlic powder, flour until mixture is at a low simmer. Then turn the heat off, and add in the egg yolk while continuously stirring the cheese mixture until fully incorporated.
- Add the cheese into the macaroni and stir until evenly distributed. Scoop the macaroni into the greased and breaded cupcakes tin.
- Top the mac and cheese with some parmesan cheese, remaining breadcrumbs and crumbled bacon.
- Bake for 35-40 mins or until the tops are golden brown.
- Shake to release mac and cheese bites from the pan. Serve and enjoy!
