These Barstool Cookies I made as my individual project in the cookie section of Christina Tosi’s Milkbar class. Taking the principles we learned from the class we were instructed to create a recipe of our own to reflect a point in time. I wanted to make a cookie that is a complimentary late night snack to bring me back to those good old college days.
The dough base is a pretzel dough, with complimentary mix ins of chocolate chips, bacon, almonds and pretzel. To make the pretzel dough taste, we ground up salt-less pretzels into a flour. Its a great shortcut to get that pretzel taste without buying too many ingredients. To make crispy bacon, I recommend checking out our post on making the perfect bacon.
For a Gluten Free version replace the pretzels with gluten free Pretzels. And replace the all purpose flour with bob’s red mill all purpose gluten free flour and 1/4 tsp xanthan gum.
Barstool Cookies
Ingredients
- 110 g Butter 1 stick
- 125 g Dark Brown Sugar ¾ cup
- 75 g Sugar ½ cup
- 1 egg
- 1 g Vanilla Extract ¼ tsp
- 95 g Flour ½ cup
- 60 g ground unsalted pretzels ½ cup
- 2 g Baking Powder ½ tsp
- 1.5 g Baking Soda ¼ tsp
- 3 g Salt ½ tsp
- 20 g cooked bacon bits ¼ cup ( about 4 slices)
- 15 g Pretzel chunks ¼ cup
- 40 g Chopped Almonds ⅓ cup
- 60 g Mini Chocolate Chips ⅓ cup
Instructions
- Mix-in prep: Cook the bacon until crispy, set aside to cool. Once cooled cut into ¼ inch pieces. Set aside. Grind unsalted pretzels into a flour. Set aside. Chop Pretzels into Pretzel Chunks
- Dough Prep: Combine the butter and sugar in the bowl of a stand mixer with the paddle attachment. Cream together on medium-high for 2-3 minutes. Scrape down the sides of the bowl with the spatula, add the egg, and beat for 7-8 minutes until very light and fluffy.
- Reduce the mixer speed to low and add the flour, pretzel flour, baking powder, baking soda, and salt. Mix just until the dough comes together, no longer than 1 minute. Scrape down the sides of the bowl.
- Add in the mix ins, Bacon, Almonds, Mini Chocolate Chips and Pretzel Chunks.
- Using a 1 inch scooper scoop dough into balls, place onto baking sheet and press dough down.
- Bake for 8-10 minutes or until sides start to brown.
