Buttermilk Broccoli Salad is such a refreshing summer salad. It has a great combination of fresh, raw broccoli and sinful bacon and cheese.

This salad is relatively easy to make. We start off like any typical salad gathering or making the ingredients, then putting it all together.

We start off with some crumbled bacon using our perfect bacon recipe.  Then we add in the cheese, sunflower seeds, raw broccoli and the dressing. The dressing is the star of this dish. It’s a combination of buttermilk, mayonnaise, lemon juice, garlic and sugar. It’s a creamy and light, and packs a punch with the green onion and garlic. Ka-pow.

Buttermilk Broccoli Salad

Ingredients

  • 3 heads broccoli
  • 5 pieces of bacon
  • ½ cup light mayo
  • ½ cup low fat buttermilk
  • 1 finely chopped green onion
  • 3 TBSP lemon Juice
  • 1 TBSP sugar
  • 1 clove garlic finely grated
  • 4 oz grated sharp cheddar cheese
  • ¼ cup roasted unsalted sunflower seeds

Instructions

  • In a large skillet on medium heat, cook the bacon for 8-10 mins until crispy. Transfer to a paper towel lined pan. Crumble bacon and set aside.
  • Chop Broccoli into small pieces of florets and set aside.
  • In a small bowl, combine mayo, buttermilk, finely chopped green onion, garlic, lemon juice, sugar. Mix until it is a thin dressing consistency.
  • In a large bowl, combine broccoli, dressing, sunflower seeds, cheese, bacon and top with the buttermilk dressing. Toss to combine. Eat and Enjoy.
