Chicken Marsala

This classic Italian dish looks complicated because of the number of ingredients. But when you get down to it, the basics of this recipe is a breaded chicken. EASY!  And the sauce which is made of spices hidden in the back of your spice rack and of course the sweet Marsala wine. Which surprisingly can be found in supermarkets in the vinegar isle.  Sure you can get fancy and use a fancier wine, but this will do just fine. And if you are like me you only want to stop at one store not multiple to gather all your ingredients.

Chicken Marsala

Ingredients

  • 1 pound chicken breast
  • 2 cup flour
  • 3 eggs
  • 2 cup breadcrumbs
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 cup chicken stock
  • 1/2 cup Sweet Marsala wine
  • 3 TBSP butter
  • 15 Mushrooms
  • 2 TBSP Parsley
  • 1 TBSP Garlic
  • 2 TBSP Shallots
  • 4 TBSP Olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Bread the chicken:
  • Put out a plate of flour with a dash of salt and pepper. Put out another plate of breadcrumbs. Whip the eggs together. Dredge the chicken in flour, then the egg mixture, then breadcrumbs and set aside on a plate.
  • Heat olive oil in a pan on medium heat, add in breaded chicken cook until brown and Flip. Set aside.
  • In a frying pan, combine shallots and garlic, sliced mushrooms. 1 tsp salt. 1 tsp pepper. Once mushrooms shrink down, Add in chicken stock, butter and Sweet Marsala wine. Cook for 2 mins. Then in a small bowl add about 1/4 cup sauce from the pan, add 2 tablespoons cornstarch. Thoroughly mix then add to the pan and incorporate so the sauce thickens (about 10 mins).
  • Serve chicken with marsala sauce on top
