Everything Mini Bagels

I love bagels!  There’s nothing quite like a fresh bagel with cream cheese and a hot coffee.  Especially on a weekend morning.  For me, that ideal bagel would be an everything bagel and I’d be sitting on a park bench in Central Park.  Well, when I can’t have that perfect moment, or a fresh bagel, or I want a healthier alternative, I turn to my trusty donut pan and pantry to whip up a batch of everything mini bagels.  This recipe uses gluten free flours to amp up the nutritional content, but comes together quickly and curbs your bagel craving.  Also mini sized you can eat more than one and not feel guilty!

Everything Mini Bagels

Ingredients

  • ¼ Cup almond flour
  • 2 Tablespoons ground flax meal
  • 2 Tablespoons coconut flour
  • 2 Eggs
  • ¾ Cup water
  • 1 Teaspoon baking powder
  • ½ Teaspoon garlic powder
  • 1 Teaspoon or more everything seasoning for topping

Instructions

  • Preheat oven to 350 degrees
  • Combine coconut flour, almond flour, flax meal, garlic powder and baking powder and mix well
  • Scramble eggs and add in water
  • Mix dry ingredients into wet ingredients and mix well to ensure there are no lumps
  • Spray a 6 well donut/bagel baking tin with non-stick spray
  • Evenly portion out the batter into the 6 wells
  • Top each of the bagels with the everything seasoning
  • Bake in the oven 25-30 minutes or until puffed, slightly golden or a toothpick comes out clean
  • Remove from oven and allow to cool in pan
