Huevos Rancheros translates to ranch eggs, its a common dish that is made famous by its simplicity and quickness to make. Its simply a tortilla, black beans, eggs and some flavorful topping of your choice. The base it simple and you can make it as complex as you want.   What I love about Huevos Rachero is that it’s a light yet satisfying breakfast. The black beans and eggs are full of protein which keeps you full longer and gives you more energy.

What’s great about this recipe is that its very fluid. You can customize this dish to your taste without compromising the integrity of the dish. For example I opted for corn tortillas which makes this dish gluten free and extra sour cream because its delicious.

 

Huevos Ranchero

Ingredients

  • 14 oz can of black beans
  • ½ tsp Cumin
  • ½ tsp Salt
  • ½ tsp Pepper
  • 2 TBSP mexican cheese
  • 2 Eggs
  • 2 Tortillas
  • ½ Avocado
  • 1 TBSP Sour cream
  • 1 Tomato diced
  • 1 TBSP Cilantro
  • 1 TBSP Cojita Cheese
  • 2 Lime Wedges

Instructions

  • In a small saucepan, heat the black beans, cumin, salt and pepper until the beans are soft. Once the beans are soft and cooked, drain and set aside.
  • In a small skillet over medium heat, warm each tortilla flipping after each side browns a little. Set aside on a separate plate.
  • Then place the black bean mixture onto the tortilla. And top with mexican cheese
  • In the same small skillet scramble and fry the eggs with a pinch of salt and pepper
  • Add the cooked eggs onto the tortilla.
  • Top with sour cream, diced tomatoes, avocado, cojita cheese, cilantro and lime juice from lime wedges.
