Orange Creamsicle Jello Slices

Technically these are orange jello molds, but I just couldn’t call them that.  Calling them jello molds makes them sound like grandma food from 1950 and these treats are way cooler than that.  In fact, these orange creamsicle jello slices are my new breakfast obsession. They are low calorie, transportable, fun, tasty, and maybe environmentally friendly?  I like to think that because they are made in their own, natural, biodegradable container (orange peel), rather than a plastic container it’s slightly better for the environment?  I’ve been packing these for breakfast and they are great with my morning latte, but they are also a perfect low calorie dessert or afternoon snack.

Orange Creamsicle Jello Slices

Ingredients

  • 2 Navel Oranges
  • One 0.3 oz Box sugar free orange jello small 4 serving box
  • 1 Cup Greek Yogurt

Instructions

  • Slice oranges in half across the navel
  • Carefully remove insides of all four orange halves; run knife around outer edge of orange halves careful not to poke holes in the peel and then scrape out orange insides, or you can do the same using a grapefruit spoon
  • Reserve orange insides to use for a fruit salad, as a side to your jello slices or for smoothies
  • Line empty orange halves up in a pan, baking dish or ramekins to keep them stable. I used ramekins in a 9x9 square baking dish so that I could easily put them into the fridge without them spilling.
  • In a large bowl dissolve jello in one cup of boiling water
  • Add the one cup of yogurt to the jello and water mixture
  • Using a whisk mix the yogurt into the jello and water mixture until it is fully combined and no lumps or bits of yogurt are left
  • Put mixture into empty orange halves distributing evenly
  • Place in refrigerator and allow to set for four hours
  • Enjoy for breakfast, dessert or as a snack!
