Mustard isn’t just for hotdogs, mustard is now being used to flavor ALL the meats. And of course, why wouldn’t it! Mustard is very low calorie and yet packs so much flavor. Its a great addition to “spice” up a meal. It also has selenium and magnesium which is known to be good for low cholesterol and is said to help manage symptoms of asthma, high blood pressure and migraines.
Pineapple Mustard Chicken at first sounds like an odd combination. But somehow it works. The chicken is able to adapt the sweet flavors of pineapple, a spot of honey and a dab of mustard to add some complexity and mellow out the sweetness. I’m normally not a huge fan of mustard but it pairs very well with the chicken. With this recipe we are essentially cooking the chicken then preparing the sauce as it coats the chicken. Its a quick one pan meal
Pineapple Mustard Chicken
Ingredients
- 1 pound chicken
- 1 TBSP olive oil
- 1 can of pineapple slices
- 3 TSP Dijon Mustard
- ¼ cup Honey
- Pinch of Salt
- Pinch of Pepper
Instructions
- In a large frying pan, over a medium flame, brown and cook the chicken in the olive oil.
- Then remove from the pan and set aside.
- In the same pan over medium flame, combine the honey, mustard, salt pepper and can of pineapple slices with juice to deglaze the pan. Stir until the mixture thickens
- Add the chicken back into the pan and stir until the chicken is coated. Cook for an additional 4 mins. Serve hot!
