Spinach Artichoke Cauliflower Rice

I think I’ve expressed my love of spinach artichoke dip before. It’s tasty, flavorful,  and want to think it’s healthy because it has vegetables but also a bit fancy because it has artichokes.  This recipe aims to combine my love of spinach artichoke dip with my need for a decently healthy lunch or dinner option that’s quick and easy to put together. By only including the veggies and a dash of cheese this recipe definitely ticks the box for healthy.  As for easy, I don’t know how much easier it could get, you don’t need to turn on the stove or the oven, the most difficult part is probably using the can opener! For lots of flavor and almost no work this dish is sure to become a regular on your lunch or dinner schedule.

Spinach Artichoke Cauliflower Rice

Ingredients

  • 15 oz Can Artichoke Hearts
  • 10 oz Package frozen spinach roughly 2 to 2 ½ cups
  • 10 oz Package frozen riced cauliflower roughly 2 to 2 ½ cups
  • 2 Tablespoons parmesan cheese
  • 1 Teaspoon Adobo optional

Instructions

  • Open and drain artichoke hearts & cut into small pieces
  • Cook cauliflower and spinach in microwave
  • Combine all ingredients in casserole dish and serve!
