We had some Doritos left over from a recent event and I wasn’t sure what to do with them. Sure I could eat them, but then I have the guilt of eating all of these chips when I’m suppose to be dieting. So instead I turned it into a flaky crunchy baked chicken cutlet crust. I would have breaded the chicken anyways, so this recipe combines all the calories in one meal. And limits how many handfuls I can take from the bag.
We had both classic Nacho Cheese Doritos and Flamin’ Hot Doritos in the cabinet, so I tested both. They both came out great, but if you aren’t opposed to spicy, I would choose the Flamin’ Hot, it has just a tad more flavor.
Flamin' Hot Dorito Chicken
Ingredients
- 4 slices Chicken breast
- 1 cup flour
- 1 egg
- 1 cup finely crumbled Doritos Recommend the flaming hot brand
- 2 TBSP olive Oil
Instructions
- Set up the prep: Cracked scramble the egg in a bowl, set side. Pour and spread the flour on a plate, set aside. Finely crumble the doritos until they are small crumbs, then pour and spread them on a plate and set aside.
- Dredge the chicken: Take a slice of chicken, put in on the flour dish and flip the chicken until it’s coated in flour. Then dip the flour covered chicken in the egg bowl. Once it’s covered in egg, put it on the dorito crumb place and flip to coat in doritos. Repeat with the remaining pieces of chicken and set aside.
- Heat the olive oil in the large frying pan on medium-low heat until it’s warm. Then add in the coated chicken. And let it simmer in the oil for a few mins until it browns, then flip to the other side.
- Once the chicken is done cooking, transfer to a paper towel lined plate ( to soak up the oil)
- Serve and Enjoy!
