Shepard’s pie is a classic Irish comfort food that is essentially a layer of cooked meat/veggies and a layer of mashed potatoes. This “pie” is crust-less which means this recipe also happens to be gluten-free without any substitutions. This recipe became popular in the 1700’s  because it was a frugal way to combine leftovers into a new and exciting dish. It’s cheap, easy and delicious.  And there is reason why it so well loved today. 

This is a hearty meat and potatoes meal that has a lot of flavor and can be adapted to be lower calories. We reduced the amount of oil and heavy cream which makes the potato layer denser so you feel fuller. talk about stretching your calories and your dollars! We also removed any added oil from the meat, which also cuts down on the empty calories. Enjoy this healthy Shepard’s Pie!

Ingredients

  • Potatoes:
  • 4-5 Potatoes
  • ¾ cup Chicken Broth
  • 2 TBSP Sour Cream
  • Pinch of Salt
  • Pinch of Pepper
  • Pinch of Paprika
  • Filling:
  • 1 lb 95% lean ground beef
  • 1 medium onion
  • 1 Celery stalk chopped
  • 2 Cloves Garlic
  • 8 oz Mushrooms
  • 3 Carrots
  • 2 TBSP flour
  • 1 cup Beef Broth
  • 2 tsp Tomato paste
  • 1 tsp Worcester sauce
  • 1 tsp chopped rosemary leaves
  • 1 tsp chopped thyme
  • Pinch of Salt
  • Pinch of Pepper

Instructions

  • Boil Potatoes in a medium pot until cooked and soft
  • Drain pot, and mash the potatoes with a masher or fork. Add in chicken broth, sour cream, salt and pepper. Mix well. Set aside.
  • Preheat oven to 400 degrees
  • In a large saute pan, brown the meat over medium heat, add salt and pepper to taste. Once browned, set aside on a plate.
  • In the same pan, saute oil, onions, mushrooms, celery until vegetables are tender. 6-8 mins.
  • Add the flour, beef broth, tomato paste, worcheshire sauce, rosemary, thyme, cooked meat and mix well. Simmer on low for 8-10 mins
  • Spread the meat on the bottom of the casserole dish, top with mashed potatoes and sprinkle paprika on the top
  • Bake 20-25 mins, the place under broiler 1-2 mins til the potatoes turn golden
  • Remove from oven and cool 5 mins before serving.
