Hush puppies, corn bread, corn muffins, I’ve always got to have one of these to go with a big bowl of chilli or some southern BBQ. I’m always testing out new variations and these baked hush puppies are a great savory corn option that is a bit lighter than the traditional fried version. They’re also great because they are bite sized so you can have just one or two or a whole bunch!
Baked Hush Puppies
Ingredients
- 1 Cup yellow cornmeal
- ¼ Cup all-purpose flour
- 1 ½ Teaspoons baking powder
- ½ Teaspoon garlic powder
- ½ Teaspoon salt
- 1 Egg
- 3/4 Cup milk
- 1 Small onion finely chopped (about ½ cup)
- 1 Tablespoon honey
Instructions
- Preheat your oven to 350 degrees and grease a mini muffin pan
- In a large bowl, combine the cornmeal, flour, baking powder and salt
- In a separate bowl whisk the egg and milk
- Add the wet ingredients to the dry ingredients just until combined
- Stir in the chopped onions
- Evenly distribute the batter in the muffin tin
- Bake in the oven for 15 to 20 minutes or until just golden brown
- Let cool and serve with your favorite dinner or breakfast
