Dijon Mustard chicken is a one pan wonder and meal prep friendly. This recipe came about as I was searching for meal prep ideas. The whole point of doing a healthy meal prep is to make something simple yet fast and healthy. Its the impossible trifecta. But I think I have cracked the code with this recipe. The dijon mustard gives it just enough flavor without adding calories and just enough spice to keep it interesting.

Garlic Honey Dijon Chicken

Ingredients

  • 1 1/2 lb Chicken thighs boneless skinless
  • 1 tsp Coriander ground
  • 7 Garlic cloves
  • 1 Yellow onion large
  • 3 tsp Dijon mustard quality
  • 1 tsp Honey quality
  • 1/2 tsp Black pepper
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Paprika
  • 1 pinch Salt
  • 1/4 cup extra virgin olive oil

Instructions

  • Preheat Oven to 400 degrees
  • Cover a baking sheet with aluminum foil. Cut the onion and spread it evenly across the baking sheet.
  • Cut chicken into smaller pieces set aside.
  • In a small bowl combine all other ingredients together to form a spice glaze
  • Dip the chicken in the spice glaze and place on the baking sheet
  • Bake until the chicken is thoroughly cooked. About 30 mins
